  2. Mash the bananas in a large bowl.
  3. Next, add the milk, peanut butter, egg, and vanilla. Whisk to combine.
  4. Add the rolled oats, baking powder, cinnamon and salt and mix until combined.
  5. Fold in the chocolate chips until evenly distributed.
  6. Pour the oatmeal mixture into the prepared baking pan. Spread it around with a spoon or spatula until evenly distributed. Sprinkle with additional chocolate chips, if desired.
  7. Place in the oven and bake for 40-50 minutes or until an inserted toothpick comes out clean. Let it sit for at least 30 minutes before cutting to allow it to firm up.

TIPS FOR THE BEST BAKED OATS RECIPE

If you prefer a sweeter oatmeal, I recommend adding a bit of maple syrup (or other desired sweetener) to the recipe. If you do choose to use maple syrup, you may need to increase the baking time slightly.
  • To further enhance the sweetness, I recommend using overripe bananas (the brown spotty kind) to maximize the flavour.
