  • Taco seasoning: Either use my homemade taco seasoning blend or store-bought. Look for reduced sodium to limit the salt.
  • Pizza dough: Either make your own pizza dough (like this easy Greek Yogurt Pizza Dough) or buy store-bought dough. Feel free to use whole-wheat or regular wheat.
  • Pizza sauce: Doctor some store-bought pizza sauce or this homemade Low Sodium Pizza Sauce with spices to make a zesty sauce reminiscent of enchilada sauce.
  • Spices: You’ll need some chili powder, ground cumin, garlic powder, and onion powder for the sauce to give it an extra kick of flavour.
  • Shredded cheese: Use a blend of cheeses, mild cheddar cheese and mozzarella, for the perfect melt.

Step-by-Step Instructions

  1. Preheat the oven to 450 degrees F.
  2. In a large skillet over medium-high heat, add ground beef and cook until brown and crumbly, about 5-7 minutes. Drain the grease. Sprinkle the taco seasoning on it and cook for an additional minute.
  3. Sprinkle some cornmeal or flour over your working surface to prevent the dough from sticking. Take pizza dough and cut it in half. Stretch or roll each half into a thin crust and place it on a nonstick baking sheet to form two small pizzas.
  4. Bake them in the oven for 3 minutes. Take the pizza out after 3 minutes but do not turn off the oven.
  5. Meanwhile, in a small bowl, mix together pizza sauce, chili powder, cumin, garlic powder and onion powder until combined.
  6. Spread half of this mixture over each pizza. Sprinkle beef, veggies (if adding) and cheese evenly over top of the sauce on each pizza.
  7. Bake again for 10-12 minutes until the cheese melts and the crust turns crunchy. Serve hot or at room temperature for a school lunch.
