Then, they’re topped with a delicious cream cheese frosting, and your kid’s favorite fruits arranged to look like Easter eggs. They’re perfect for Easter brunch or a healthier holiday dessert!

Easy Fruit Easter Eggs

In our house, we love fruit pizza! The combination of sweet sugar cookie dough with the tangy cream cheese filling and fresh fruit is always delicious. Plus, the colorful fresh fruits look like little jewels on top!

These homemade Easter fruit pizza cookies provide a healthier spin for families looking for a more nutritious and lower sugar option. They’re prepared with my favorite sugar cookie dough, which is made with almond flour for a dose of healthy fats.

I also like to add a little yogurt to the cream cheese frosting to make it a little lower in fat and higher in protein. They’re such a fun treat for kids!

Why We Love Mini Easter Egg Fruit Pizza Cookies

  • Healthier version: With a gluten-free cookie dough made with maple syrup and almond flour and a lightened-up cream cheese topping, these mini fruit pizzas are a fantastic alternative to the original. The cookies are still perfectly sweet, chewy and tender, the topping is so creamy, and the fruits provide a refreshing burst of flavor and nutrients! 
  • Great for Easter: You just need an egg shape cookie cutter to make these adorable egg cookie pizzas! It’s so much fun to arrange the fruits like traditional Easter eggs. You can add horizontal lines, zigzags, little fruit flowers, or anything else you can think of!

For the Cookies

  • Almond flour: Use regular blanched almond flour for the lightest texture and flavor.
  • Salt: A pinch of salt helps incorporate a bit of extra flavor into the dough.
  • Maple syrup: This will add a little sweetness to balance the fruits.
  • Coconut oil: Use this instead of butter in the sugar cookie dough. Make sure it is softened at room temperature.
  • Warm water
  • Vanilla extract: For a little extra flavor.

For the Fruit Pizza Frosting

  • Light cream cheese: Use lower fat cream cheese softened at room temperature.
  • Greek yogurt: Plain Greek yogurt will make the fruit pizza frosting even creamier, but with less fat and more protein.
  • Maple syrup: Sweeten to taste. Honey can also work for kids older than 2 years of age.
  • Vanilla extract
  • Lemon juice: For a pop of zesty flavor.

For Decorating

  • Assorted fruits: Choose a variety of fresh fruit in different colors. Cut the larger ones into small pieces to decorate the cookies.

Step-by-Step Instructions

Step 1: Prepare the Homemade Cookie Dough

  1. Preheat the oven to 350°F. Line a baking sheet with parchment paper.
  2. Add the almond flour and salt to a large bowl and mix to combine, breaking up any clumps of almond flour.
  3. Next, mix the maple syrup, coconut oil, water and vanilla in a small bowl until combined, smoothing out any clumps of coconut oil with the back of the spoon.
  4. Add wet ingredients to the almond flour mixture and mix until combined. The mixture will seem crumbly, but it should stick together when you press it together with two fingers.

Step 2: Cut out the Easter Egg Cookies & Bake

  1. Roll the mixture into a ball and place in between two pieces of wax or parchment paper. Place in the fridge for 30 minutes. 
  2. Using a rolling pin, roll out the dough so that it’s roughly 9mm thick.
  3. Use an easter egg shaped cookie cutter, press into the cookie dough. Place each cookie on the parchment-lined baking sheet about an inch apart. Repeat, collecting the excess dough and rolling it into a ball and rolling it flat to press more cookies until all the dough is used up.
  4. Bake the cookies for 14-16 minutes or until the bottom and top edges of the cookies are very lightly golden brown (watch them very carefully). Allow the cookies to cool completely on the baking sheet for 10-15 minutes, as this is the time when they’ll firm up.

Step 3: Prepare the Frosting & Toppings

  1. While the cookies are baking, prepare the cream cheese frosting. Add the cream cheese, Greek yogurt, maple syrup, vanilla and lemon juice to a mixing bowl. Using a handheld electric mixer, beat the mixture together until combined and fluffy. 
  2. Cut up desired fruit for decorating.

Step 4: Decorate the Mini Fruit Pizzas

  1. When the cookies have cooled, spread the cream cheese frosting in a thick layer evenly over each Easter egg.
  2. Decorate with desired fruit. Serve or store in the fridge for later.

RECIPE TIPS

  • Be sure to roll the dough out thick enough so that the cookies are strong enough to support the cream cheese frosting and fruit. I rolled mine out to roughly 9mm and found that to be a good thickness.
  • Watch the cookies closely as they can burn easily. Start checking them around the 10 minute mark and add additional cooking time as needed. You may also wish to rotate the baking sheet if the cookies at the back are browning more quickly.
  • The amount of Easter eggs you get will depend on the size of your cookie cutter. Mine was about 3.2″x 2.4″x 0.8″ and I got 9 Easter egg pizzas. If you have a bit of leftover dough, you can form it into a small cookie.
  • You can make the cookies and frosting in advance. However, I recommend waiting to decorate the cookies with fruit until you’re ready to serve to keep it fresh.
  • The fruit used on the cookies is just a suggestion. Feel free to switch up the type of fruit and design if you wish!

What fruits go on fruit pizza?

It’s a good idea to use softer fruits that are easy to bite on each individual fruit pizza. For example, apples have a firm, crisp texture, which can be hard for kids to bite through in addition to the sugar cookie base.

Fresh berries, like fresh strawberries, blueberries, and raspberries, are perfect. I also like to add sliced kiwis, mandarin oranges, pineapple, and more. Be sure to use a variety of fruit to decorate the egg cookies like a real Easter egg!

Can you freeze fruit pizza cookies?

Technically you can freeze the cookies, but I don’t recommend freezing the frosting or cut fruit. The cookies will need to be wrapped in several layers of plastic wrap or tucked into a freezer-safe container.

The frosting can potentially be frozen and thawed, but that often causes dairy products to split and become watery. It’s best to make a fresh batch of frosting with cream cheese and yogurt as needed!

How do you make fruit pizza cookies for Easter?

The easiest solution is to use a cookie cutter to cut the homemade cookie dough into the shape of an egg, although other shapes like a flower or bunny would work as well! Bake them following the recipe directions and allow them to cool all the way to room temperature before frosting and decorating. It’s really that simple!

Storage Guidelines

  • These cookies are best served right after decorating, as the frosting and cut fruit can add moisture to the baked cookies. Eat them within 1-2 hours of serving, or decorate them right before eating!
  • Store the leftover undecorated cookies in an airtight container at room temperature for 3-4 days.

Recipe Variations

  • Make a larger sugar cookie fruit pizza: This recipe intentionally calls for cutting the cookie dough into the shape of an easter egg, but you could skip the cookie cutters if you’d like! Just press the cookie dough into a large egg shape and let it cool completely on the cookie sheet before decorating. 
  • Adjust the shape: The egg shape is great for Easter, but you can really make any shape you’d like! These delicious treats would be great cut into circles, squares, stars, hearts, and more. 
  • Change the topping: The cream cheese frosting is a classic choice, but there are lots of options! For a sweeter treat, you can use my homemade chocolate frosting or even a little melted chocolate. The chocolate flavor is great with fresh berries!

  • 1/4 teaspoon salt
  • 1/4 cup maple syrup
  • 3 tablespoons coconut oil (softened at room temperature)
  • 1 teaspoon warm water

For the cream cheese frosting

  • 6 ounces light cream cheese, at room temperature
  • 2 tablespoons plain Greek yogurt
  • 2 tablespoons maple syrup
